Valdeon - cow's milk, goat's milk, or cow's milk mixed with goat's milk creamy blue cheese, cut cheese -up to 6 lb, Spain. This pasteurized blue cheese is made deep in the Picos de Europa, just outside of the province of León. Produced with cow and goat’s milk, Valdeón is sought after because it is milder than DOP Cabrales and is wrapped in sycamore maple or chestnut leaves which make for an appealing presentation. It has an excellent balance of a sweet and tangy flavor, with a nice earthy finish. It has a rough and irregular exterior, dark grey tones and small red and bluish spots. The paste has a soft texture, full of small cavities where a white and blue-green mold is concentrated. Its flavor is intense, slightly lactic, buttery and melts on the palate. Use as a spread on bread or crackers, or accompany it with a good, strong bodied wine. Gluten, Nut, Egg Free.
