It has a smooth, hard, natural rind that is amber in color. The flavor is buttery, nutty, and smoky due to the cheese being stored near the fireplaces. The cheese has a compact texture, it is dry but not crumbly. It pairs well with red wine and cider. Cut cheese, up to 7.4 lb.
