It is aged between 7-35 days and is a fun cheese, since it provides a sweet, fruity, and slightly tangy flavor. It is made with pasteurized sheep's milk, so despite being a cheese with a very short maturity, between 7 and 35 days, it contains all the flavor of sheep's milk. If you are lactose intolerant, you can eat it without any fear. Produced by Quesería La Antigua in Zamora, Spain. To consume, take the cheese out of the fridge and leave it out until it reaches approximately 20 C, allowing the flavours and aromas to invoque the cheese's intensity.
