Fontina Val d'Aosta is a raw, unpasteurized, semi-firm, cow's milk cheese from Italy. Genuine Italian Fontina comes from the Val d'Aosta mountains near the Swiss border. It is firm, thin, dark yellow or reddish-brown in color. It is a pressed, cooked medium-ripened hard cheese with a delicate, nutty, almost honeyed flavor, somewhat like a Swiss Gruyere but more buttery and sweeter. It has a subtle fruity, grassy aroma and supple texture. This cheese is ideal for fondues. Cut cheese, up to 19 lb.
