White Sturgeon (Acipenser transmontanus) is a species of fish native to the North American West Coast, now sustainably farmed in fresh artesian ponds in Italy. The fish are fed a natural diet, which allows their roe to be similar in flavor to that of the famous Osetra caviar.
This caviar's large and glossy pearls shine in golden to dark brown hues and are filled with a lightly nutty, smooth, and robust flavor.
