Each wheel is carefully turned, lightly brined, and brushed. It is hard with a firm and dense yet pliable texture and slight graininess. Its density makes it stronger and less stringy than Emmental when heated, so it is better for grating, grilling and using in soups. It has the buttery and toasty-flavor that features a wonderful complexity of flavors, including candied walnuts and dried fruit, with earthy and nutty notes and a rich, creamy aroma.
