This Scottish style smoked salmon comes from the Atlantic Salmon (salmo salar). It is hand-cured and smoked in the traditional fashion, using oak chips. This produces a firm texture and a rich, exquisite taste. We only use salmon produced in accordance with the highest environmental and aquaculture standards. This is a whole salmon side from an Atlantic Salmon. The side is trimmed by hand, with the bones and smoked skin removed.
