This Paleta from Fermín comes from the shoulder of the 100% Iberico free-range pig. The pig's free-range lifestyle and diet consisting of grains, grass, and roots makes it very unique.
Tasting notes: It has an incomparable texture and flavor. The 100% Ibérico Free Range pig has the unique ability to store healthy fat, creating a marbling effect that makes it extremely flavorful but more delicate than the Acorn-fed ham.
