The lamb shank is known to be one of the most flavorful cuts of lamb. The best way to prepare lamb shanks is by braising them. To ensure the best tasting lamb shanks, they need to be cooked over low heat for a long time in order to reveal their smooth texture, full flavor, and fall-off-the-bone juiciness. These bone-in hind shanks are removed from the lamb leg by a straight knife cut through the stifle joint, the knuckle tip is removed.
