Salmo salar, commonly known as Atlantic salmon or the king of fish, is a species of anadromous fish in the family Salmonidae. It is considered a healthy and luxurious food in many cultures and is featured in numerous popular traditional cuisines, making it one of the most demanded fish on the market.

H. Forman & Son is based in London and was founded in 1905, making it the UK's oldest surviving salmon smokehouse. They exclusively use a cold, friction-based smoking process with oakwood and meticulously clean, split, trim, fillet, salt, and carve their salmon by hand to ensure their products' utmost quality.

Each fish is cured for 24 hours before the friction-smoking process begins. Instead of burning it, a wheel grinds at high speed against oakwood to produce smoke, keeping the fish cool, damp, and free of ash residue. This imparts it with the delightful taste of oakwood smoke and preserves its natural flavors without requiring to pump it full of sugar and brine to keep it moist, preventing the slices from turning to mush when frozen.
