Smoked Salmon, Soft Boiled Egg and Avocado on Toast

 

Ingredients: 

4 Slices of Sour Dough Bread
1 Avocado- Peeled and Quartered
4 Free Range Eggs
1/2 Lemon for Juicing
Pinch of Black Pepper

 

Directions:

  1. Preheat the oven to 375 degrees.
  2. Get a medium pot and fill with water.
  3. Bring water to a boil and add eggs.
  4. Boil for 6 minutes and 30secs.
  5. Place pot underneath cold running water for 2 mins and then peel the shell.
  6. Place sourdough bread slices in the oven for 4 mins or until crispy.
  7. Top sourdough bread slices with salmon, soft boiled egg, and slices of avocado.
  8. Squeeze lemon juice, drizzle olive oil and sprinkle black pepper to taste.
