American White Sturgeons (Acipenser transmontanus) are endemic to the American West Coast, now sustainably farmed in Californian ponds filled with fresh artesian waters. The natural diet they are fed allows their caviar's flavor to closely resemble that of the famous Osetra caviar.
This caviar's generously sized beads vary from golden to dark brown brown colors with a glossy, shiny appearance, boasting a lightly nutty taste that is both smooth and robust.
