This Norwegian style smoked salmon comes from the Norwegian steelhead trout (Oncorhynchus mykiss). It is hand-cured with salt and sugar, then cold-smoked in the traditional fashion, using oak chips. This produces a firm texture and a rich, exquisite taste.
